Olmes de Jesus García began experimenting with Natural and Honey processing methods to improve his coffee quality and compete in quality competitions. His hard work paid off and this lot, which won 3rd place in the 2021 Best of Caldas competition.
Olmes and his family selectively handpick ripe, red cherry to ensure only the highest quality coffee is produced. They seal the cherry in airtight barrels and anaerobically ferment it for 96 hours. Following fermentation, cherry is laid to sundry. They rake cherry frequently to ensure even drying.
Can you taste it?
Due to the anaerobic fermentation process the Olmes has taken on a particularly fruity and tart like flavour. Expect tasting notes of cherry, kiwi, raspberry alongside a dark chocolatey finish.
Our recommendation
This is a perfect candidate for multi-use brewing due to its versatility. As such it is omni-roasted one way for both filter and espresso based drinks. Our picks for this are either the french press/cafetiere or as an espresso base for your milk drinks for extra body and umph.
We recommend consuming this coffee between weeks 2 to 4 after its roast date, but of course, try it before or after too.
