Named after coffee producer Frederic Pillimue, we introduce the Pillimue coffee from the region of Piendamo, Colombia.
Frederic is a young dynamic producer who breaks the mould growing coffee within an area known and threatened by illicit drug trade. Providing an inspiration for his honest living he is always on the look out for ways to elevate coffee quality to the highest degree. Pillimue owns and grows coffee on his farm ‘Finca Santa Ana’, which sits favourably 1900 metres above sea level.
This particular coffee lot was grown using a mixture of varietals including Castillo, Typica and Caturra. Additionally, it has been naturally processed for an added funky fruit edge on the palette. Whereby the coffee cherries are picked, floated and washed, and then laid out on raised beds to dry for 20-25 days in a state of fermentation.
Can you taste it?
The Pillimue has the winter berry funk trade mark that many naturally processed coffees possess. Expect tasting notes of blackberry and blueberry with a rich body of honey.
Our recommendation
The Pillimue is pretty versatile in the cup. We recommend drinking black on filter or espresso to accentuate the fruity berry notes. It can also be enjoyed with milk for a berries an cream vibe. Win-Win situation.
We recommend consuming this coffee between weeks 2 to 4 after its roast date, but of course, try it before or after too.
