Sidra Bourbon is an exceptional hybrid varietal born from the crossing of Bourbon and Typica plants, thriving at Quebraditas Coffee Farm in Oporapa, Huila, Colombia. Managed by Edinson Argote and his family, the farm spans 18 hectares between 1,600 and 1,850 metres above sea level. Its high-altitude location and meticulous cultivation practices create the ideal environment for growing unique, high-quality coffees like Sidra.
The washed process used for this Sidra Bourbon is a hallmark of Argote’s innovative approach. Starting with careful selection, only 90% ripe cherries are harvested. The process includes steps like floating to remove defects, oxidation to eliminate mucilage, and thermal shock washing to lock in characteristics. Fermentation with a hybrid yeast culture takes 36 hours under controlled temperatures, followed by a cold rinse and precise drying for 76 hours. These methods ensure consistency and exceptional flavour clarity.
