When the Solís Cordero family purchased Finca Copey, they weren’t simply buying a coffee farm. They set out to create a landscape where coffee, forest and agriculture could support one another for generations to come.
Their Black Honey process leaves a thick layer of fruit around the seed during drying, encouraging greater sweetness and texture without masking the elegance of the Gesha variety. It’s a method that rewards patience rather than intervention.
The cup is beautifully composed. Jasmine leads into ripe tropical fruit before candied citrus and honey carry through a silky finish. Rich enough to be comforting, yet refined enough to showcase everything that makes Gesha so captivating.
