In an interesting turn of events, our latest PENG EDITIONS release and the first of 2024 has broken 2 rules.
Firstly, it’s a shade under our 90pt criteria — and secondly, you’ll now see why that’s been allowed — it’s decaffeinated. Yes, you read correctly. PENG EDITIONS #13 is decaf.
Cofinet created this lot especially for decaf and it really shows in the unbelievable blind tasting we have done ourselves and with some test subjects (aka customers). You’ll need to try it to believe it.
Jairo, a third-generation Colombian coffee farmer from Quindio, married Luz Helena Salazar and had two sons: Carlos and Felipe, founders of Cofinet. Jairo worked as a Mill Manager for Colombia’s second-largest exporter for over 40 years until retiring in 2019.
Starting with Finca La Esmeralda in 1987, Jairo cultivated his first Caturra lot, eventually acquiring five more farms: Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires. This coffee has been processed using the natural process combined with the well known sugarcane decaf process. Nothing especially outlandish some might say, but well, it works.
Optimal roast
Our roast profiles are all considered omni-roast — we believe the profile created for this coffee is just right, therefore roast adjustments are not needed for filter or espresso. Simply adjust your brew ratios to suit your taste.
