A return of a rockstar producer; it’s been a 2-year hiatus from Nestor Lasso but we felt it was time to bring him and his incredible coffees back into the fold.
Néstor Lasso’s Aji is a competition lot and one of the most striking coffees we’ve tasted from Huila. It’s a natural lot of a rare Ethiopian landrace that Néstor grows and processes at Finca El Diviso with his brother Adrian.
The Aji variety is naturally aromatic and spicy, and here it bursts with red fruits and soft florals, underpinned by a peppery edge. A brilliant example of how varietal, process and terroir can align when the producer knows what they’re doing.
Optimal roast
Our roast profiles are all considered omni-roast — we believe the profile created for this coffee is just right, therefore roast adjustments are not needed for filter or espresso. Simply adjust your brew ratios to suit your taste.
