Diofanor Ruiz grows Java at La Divisa in Buenavista, Quindío, at close to 2,000 masl. He ferments the whole cherries anaerobically for 40 hours, then washes and slow-dries the lot with an eye on temperature control and clarity.
It’s a fine example of Colombian Java — soft florals and ripe fruit wrapped in a syrupy structure. Diofanor continues to fine-tune his methods, and this lot is one of his best yet.
Optimal roast
Our roast profiles are all considered omni-roast — we believe the profile created for this coffee is just right, therefore roast adjustments are not needed for filter or espresso. Simply adjust your brew ratios to suit your taste.
